Thousands in Louisiana still without power

While the temperature was rising above freezing in south Louisiana, things remained “dicey” north of Intestate 10, Gov. John Bel Edwards said Wednesday afternoon.
At least three deaths in Louisiana have been blamed on the winter storm that affected much of the deep South. More than 111,000 homes and businesses were without electricity, according to PowerOutage.US. Thousands of residents lacked running water or were being asked to boil it before use.
“Stay home and be patient, and check on your neighbors,” Edwards asked residents during his monthly radio show.
Edwards said state officials were in the midst of a “staged reopening” of I-10. He said state police had reported working 349 weather-related crashes. No one was killed in the accidents.
Lake Charles Mayor Nic Hunter, whose city still is recovering from hurricanes that struck last year, pleaded with residents to conserve water, saying the city’s hospitals were “getting to a critical level.” The city’s water facilities were operating at double their normal output in an attempt to restore water pressure after losing it following an unexpected blackout Tuesday night, officials said.
“I’ve spoken with mayors across the state,” Hunter said. “We are not alone.”
All roads that had been closed in southeast Louisiana were open by Wednesday afternoon, according to the Louisiana Department of Transportation and Development. Others remained closed. DOTD posts road closure information at 511la.org and on its 511 smartphone app.
The weather conditions have delayed some of Louisiana’s expected COVID-19 vaccine shipments, Dr. Joseph Kanter with the Louisiana Department of Health said. He suggested anyone with a vaccination appointment to check whether they need to reschedule and said delaying a second dose by a few days would not make the vaccine ineffective.
Every COVID-19 testing site the Louisiana National Guard run except those in the New Orleans region was closed Wednesday, LDH said.

Glenn Michael Morris
Glenn Michael Morris, 70, a native of Bayou Sale and resident of Siracusa, died Friday, Feb. 12, 2021, at Ochsner Medical Center in Jefferson.
Visitation will be Friday, 4-6 p.m., at Jones Funeral Home in Morgan city. Masks and social distancing required. Private services, accessible on the funeral home Facebook page, will be held Saturday at 11 a.m. Burial will follow in Morgan City Cemetery.
He is survived by his wife, Yvonne Singleton Morris of Siracusa; daughter, Avonna Morris of Youngsville; siblings, Grace Blackburn of Patterson, Dianne Ventress and Elizabeth Williams, both of Verdunville, Rose Johnson of Austin, Texas, Earnest Ventress of St. Helena Island, South Carolina, McKinley Ventress of Fan Yating Kawait and Earl Ventress of Jeanerette; and a host of other relatives.
He was preceded in death by his grandmother and mother.

Local authorities make multiple drug arrests

(Editor’s Note: The charges listed here and the narratives that go with them are provided by the police agencies that made the arrests. Guilt or innocence has not been determined in court.)

Drug and paraphernalia possession charges as well as the winter weather kept St. Mary and Morgan City authorities busy during the long holiday period. Morgan City’s cases included an arrest involving what police say was a large quantity of heroin.

Morgan City
Chief James F. Blair reports that over the last 120-hour period, the Morgan City Police Department responded to 155 calls for service. These people were arrested beginning Friday:
—Jeaneaux Farrell Deshawn Kenner, 29, Boone Road, Houston, was arrested at 11:19 a.m. Friday on charges of speeding; possession with intent to distribute heroin, cocaine and methamphetamine; possession of marijuana; possession of a firearm in the presence of a controlled dangerous substance; possession of a firearm by a person convicted of certain felonies; transactions involving proceeds from controlled dangerous substance activity; and drug paraphernalia.
The Morgan City Police Narcotics Division conducted an investigation into illegal narcotics entering Morgan City from Houston. The division, with the assistance of the St. Mary Sheriff’s Office Narcotics Section, conducted a traffic stop on U.S. 90 and Martin Luther King Boulevard.
The driver was identified as Kenner. During the traffic stop, a K-9 officer and his partner K-9 Dally were called to the traffic stop. K-9 Dally was deployed around the exterior of the vehicle and displayed a positive odor response for illegal narcotics.
During the investigations, Kenner was found in possession of a large amount of heroin, money along with cocaine, methamphetamines, marijuana, drug paraphernalia, and a firearm. A computer check revealed Kenner was convicted of certain felonies prohibiting him from possessing a firearm.
He was placed under arrest and transported to the Morgan City Police Department for booking and incarceration.
—Caitlyn Rose Case, 31, Maple Avenue, Houma, was arrested at 1:50 a.m. Friday on charges of criminal damage to property and resisting an officer.
—Kathryne Guarisco Thompson, 26, Keith Street, Morgan City, was arrested at 2:15 p.m. Friday on a warrant for interfering with child custody and a warrant for possession of marijuana, possession of a controlled dangerous substance in the presence of a person under 17 years old and violation of the controlled dangerous substance law (drug-free zone).
—Russel C. Topham, 67, Laurel Street, Morgan City, was arrested at 11:41 p.m. Friday on charges of hit and run, driver must be licensed, report required following an accident, and careless operation.
—Katie J. McKee, 22, Belle Rose, was arrested at 12:30 p.m. Saturday on charges of possession of heroin, possession of Suboxone, possession with intent to distribute heroin and introduction of contraband into a penal facility.
—Kade Michael Percle, 24, RoderickStreet, Morgan City, was arrested at 3:42 p.m. Saturday on charges of possession with intent to distribute marijuana, possession of MDMA, transaction involving proceeds from controlled dangerous substance activity and possession of drug paraphernalia.
A patrol officer observed a traffic violation area of Front Street and Brashear Avenue and conducted a traffic stop. The driver was identified as Percle.
The officer detected an odor of marijuana emitting from the vehicle. During the traffic stop, Percle was found in possession of a large amount of marijuana, money along with MDMA and drug paraphernalia. He was placed under arrest and transported to the Morgan City Police Department for booking and incarceration.
—Gregg Anthony Vesh, 59, Moon Street, Morgan City, was arrested at 4:54 p.m. Saturday on charges of improper lane usage, view outwards or inwards through windshield, possession with intent to distribute methamphetamine and possession of paraphernalia.
—Jody Cubbedge Sr., 62, Egle Steet, Morgan City, was arrested at 4:54 p.m. Saturday on charges of possession with intent to distribute methamphetamine and possession of drug paraphernalia.
Detectives with the Morgan City Narcotics Division conducted a traffic stop in the area of La. 182 and Martin Luther King Boulevard for a traffic violation. The driver was identified as Vesh, along with his passenger, Cubbage.
During the traffic stop, investigators found both Vesh and Cubbage in possession of methamphetamine. Investigators learned that Vesh and Cubbage were going to distribute the methamphetamine in the Morgan City area. They were both placed under arrest and transported to the Morgan City Police Department for booking and incarceration.
—Ryan Oneal Cox, 22, Aucoin Street, Morgan City, was arrested at 11:37 p.m. Saturday on a warrant for driver must be licensed, possession of a legend drug without a prescription and prescription requirements penalty, and a warrant for failure to appear.
—Graig Albarado, 57, North Sterling Street, Lafayette, was arrested at 3:32 a.m. Saturday on a warrant for contempt of court.
—Bronson Williams Opitz, 33, Hilda Street, Morgan City, was arrested at 7:37 p.m. Sunday on charges of proper equipment required on vehicles, possession of marijuana, possession of a controlled dangerous substance in the presence of a person under 17 years old and possession of drug paraphernalia.
—Zoe Rives, 21, Shell Beach Road, Pierre Part, was arrested Sunday on a warrant for possession of heroin and possession of drug paraphernalia.
—Luis Alberto Reyes, 35, La. 182, Morgan City, was arrested at 9:44 p.m. Sunday on a warrant for use of multiple beam road lighting equipment and reckless operation of a vehicle.
—David Lenes Aucoin Jr., 24, La. 182, Morgan City, was arrested at 6:25 p.m. Sunday on a charge of possession of drug paraphernalia.

St. Mary
Sheriff Blaise Smith advises that over the last 120-hour reporting period, the Sheriff’s Office responded to 135 complaints and made these arrests:
—Caitlyn Rose Case, 32, Houma, was arrested at 10:48 a.m. Friday on charges of resisting arrest or officer and on two warrants for failure to appear on the charges of speeding and possession of drug paraphernalia.  No bail has been set.
—Ashley Marie Harris, 29, Baldwin, was arrested at 7:32 p.m. Friday on charges of disturbing the peace (intoxicated), resisting an officer and two counts of battery on a police officer. Bail was set at $8,500.
 —Christi Terria Henry, 37, Houston, was arrested at 10:34 p.m. Friday on a charge of driving while intoxicated (first offense).  Henry is being held for another agency.
 —Katie Jo McKee, 22, Morgan City, was arrested at 9:18 a.m. Saturday on a warrant for failure to appear on the charge of illegal possession of stolen things over $1,500.  No bail has been set.
—Javien Jawan Francis, 23, Morgan City, was arrested at 9:18 a.m. Saturday on two warrants for failure to appear on the charges of criminal neglect of family and possession of methamphetamine.  No bail has been set.
 —Eddy Agenor-Viera Lopez, 27, Kenner, was arrested at 9:17 a.m. Sunday on charges of speeding, driver must be licensed, no insurance, failure to secure registration, unlawful production, manufacturing, distribution or possession of fraudulent documentation and operating a vehicle without a lawful presence in the United States.
No bail has been set.
—Travis Michael Dupre, 43, Houma, was arrested at 9:39 a.m. Sunday on a warrant for failure to appear on the charges of possession of methamphetamine and possession of a controlled dangerous substance in the presence of persons under 17. No bail has been set.
 —Zoe Marie Rives, 21, Berwick, was arrested at 2:10 a.m. Sunday on a warrant for failure to appear on the charges of aggravated flight from an officer where human life is endangered, illegal possession of stolen things, possession of drug paraphernalia, improper turn/failure to give signal, and operating a vehicle without a driver’s license
No bail has been set.
—Juvenile female, 16, Baldwin, was arrested at 3:20 a.m. Monday on charges of curfew violation (juvenile), ungovernable juvenile, unauthorized use of a motor vehicle, criminal mischief (false report), driver must be licensed and careless operation.
The juvenile female was released into the custody of a guardian pending juvenile court proceedings.
 —Donyele D. Prince, 34, Franklin, was arrested Monday on charges of possession of marijuana, possession of drug paraphernalia and proper equipment required on vehicle.  Prince was released on a summons to appear May 24.
—Dwight Demond Prince, 34, Franklin, was arrested Monday on a charge of possession of marijuana.  Prince was released on a summons to appear May 24.
—Victor Alfonse De Leon Gomez, 24, Morgan City, was arrested at 11:21 p.m. Monday on a charge of driving while intoxicated (first offense). Bail was set at $4,000.
 —Roy L. Clements Sr., 61, Morgan City, was arrested at 10:17 a.m. Wednesday on charges a charge of domestic abuse child endangerment law.  Clements was released on a $3,500 bond.
—Shelby Rae Lee, 37, Morgan City, was arrested at 11:26 a.m. on a charge of criminal damage to property.  Lee was released on a summons to appear May 24.
—Breasia Hines, 18, Houston, was arrested at 10:38 p.m. Monday by the Narcotics Section on charges of possession of marijuana, possession of MDMA and possession of drug paraphernalia.
No bail has been set.
—Myrtle Naquin, 58, Baldwin, was arrested at 10:38 p.m. Monday by the Narcotics Section on charges of improper lane usage, no seat belt, possession of methamphetamine, possession of drug paraphernalia, and a warrant for failure to appear on the charge of simple burglary.
No bail has been set. 
—Dentrell Rankin, 28, New Iberia, was arrested at 10:38 p.m. Monday by the Narcotics Section on charges of headlight out, possession of marijuana and possession of drug paraphernalia.
Rankin was released on a $3,750 bond.

Chitimacha
Police Chief Hal Hutchinson reported these arrests:
—Thuat Vo, 45, East Admiral Doyle, New Iberia, was arrested Sunday on a charge of theft and released on a summons. 
Officers responded to a tribal business in reference to a theft.  During the investigation, it was learned Vo was involved and was arrested.
—Megan Williams, 26, Jena Street, Charenton, was issued a summons for the tribal charge of mistreatment of animals.

Assumption
Sheriff Leland Falcon reported these arrests:
—Candace Lee Ross, 34, East Garner Drive, Morgan City, was arrested Saturday on a charge of no license plate light and illegally carrying or possessing a firearm by a convicted felon.
A uniformed patrol officer observed a vehicle with an equipment violation in the area of Aristle Road and La. 662 near Bayou L’Ourse.
The deputy conducted a stop of the vehicle and made contact with the driver, identified as Ross. The driver further identified four occupants in that vehicle as convicted felons.
As a precaution, the deputy conducted pat down searches for protective purposes and then obtained a consent to search the vehicle. During the search process, deputies seized a rifle equipped with a flash suppressor (silencer) which was unregistered. That firearm was attributed to Ross.
Ross was arrested and booked into the Assumption Detention Center with a bond set at $25,000.
—Jacoby J. Ealem, 28, Lafourche Street, Donaldsonville, was arrested Saturday on charges of failure to appear (domestic abuse battery) and illegal possession of a stolen firearm.
—Trevon R. Gillard, 19, Lafourche Street, Donaldsonville, was arrested Saturday on a charge of no tail lamps and illegal possession of a stolen firearm.
An I.C.E.-assigned unit in the Napoleonville area observed a vehicle with an equipment violation and initiated a stop of that vehicle.
The deputy made contact with the driver, identified Gillard. Both the driver and passenger were interviewed.
At some point, it was determined that Ealem was wanted in Assumption Parish on a warrant for domestic abuse battery.
Further investigation resulted in the seizure of a large-caliber handgun reported stolen in 2018 in Ascension Parish.
As a result of the investigation, both Ealem and Gillard were arrested and booked into the Assumption Parish Detention Center. Gillard was released on a $25,000 bond. Ealem was released on a $27,000 bond.

Franklin
Police Chief Morris Beverly said his department responded to 30 complaints over the holiday weekend and made this arrest:
—Joseph Daniels, 24, o Samuel Street, Franklin, was arrested at 12:02 p.m. Friday, on the charges of stop sign violation, registration not in vehicle, careless operation and reckless operation. Daniels was booked, processed and released on a $1,750 bond.

18 new COVID-19 cases, one fatality in local parishes

Three local parishes have 18 new confirmed COVID-19 cases, according to the Louisiana Office of Public Health report for the 24 hours ending at midday Thursday.

One confirmed COVID-related fatality was reported in St. Martin, which has reported 102 confirmed COVID deaths and eight probable. St. Martin had eight new confirmed COVID cases Thursday for a pandemic total of 4,384 confirmed and 402 probable.

St. Mary has seven new confirmed COVID cases for a pandemic total of 3,281 confirmed and 736 probable. The parish has had 106 confirmed COVID-related deaths with 12 probable.

Assumption has three confirmed cases for a total of 1,520 confirmed and 547 probable. The death toll in Assumption remains 29 confirmed with four probable.

Statewide:

--832 new cases raise the pandemic total to 364,535 confirmed with 57,311 probable.

--15 COVID fatalities raise the toll to 8,753 confirmed with 653 probable.

--26 fewer COVID-positive people are in hospitals for a total of 823.

--2 more people are on ventilators for a total of 128.

Freezing weather hits water lines

Water pressure in Morgan City continues to rise after a boil advisory was issued Wednesday morning, but it is unclear how long the advisory will remain in effect.
City Utilities Director Bill Cefalu said water pressure dropped because of a combination of above average usage of water and many water breaks.
Morgan City is one of three areas that was under a boil water advisory Wednesday, As Assumption Parish Waterworks District No. 1 issued an advisory for Pierre Part, Belle River and Bayou L’Ourse customers and St. Martin Parish Water & Sewer Commission No. 1 issued a boil advisory for Stephensville residents. Morgan City provides Stephensville its water.
The city had to institute a boil order after losing water pressure.
However, water pressure had risen Wednesday and continued this morning but was not at suitable levels to lift the boil advisory.
Cefalu said when use among residents stops, the water pressure will continue rising. Once it reaches a suitable pressure, and the city gets approval from the state Department of Health, then the boil order can be lifted.
While water needs to be boiled for drinking and cooking, it is OK to take a shower or flush the toilet, Cefalu said.
Mayor Lee Dragna said in a Facebook post that leaks began when the water breaks that had occurred thawed with rising temperatures.
He encouraged residents to check their property for leaks and if they can’t fix the problem immediately, contact the city.
According to a post on the city’s Facebook page, city workers went “house to house” to look for water leaks and shut off water to houses with leaks found.
“If your meter is turned off, that means there is a leak on your side of the meter,” the city said in its Facebook post. “As soon as repairs are made, the water meter can be turned back on.”
Cefalu said depending on the time needed for Morgan City to fill its water towers will determine how soon Stephensville can be supplied the pressure to fill their towers.
In Assumption Parish, Water District No. 1 said in a Facebook post that breaks occurred in their main lines in the Pierre Part, Belle River and Bayou L’Ourse areas.
“We will lift the boil water advisory once the bacteriological samples are received and are found to be in compliance from the state of Louisiana’s lab,” the post said.
Elsewhere, no other advisories were issued in eastern St. Mary Parish.
While Berwick Mayor Duval Arthur and Patterson Mayor Rodney Grogan said lower water pressure has been experienced in their municipalities, they said the water there is still safe.
Arthur said the town fixed a water leak on Mount Street Wednesday.
While Arthur said the town was close to having to issue a boil water advisory, the water pressure didn’t dip enough to put the residents in danger.
Grogan said the city’s residents have experienced broken pipes, but he said as long as the city does not experience any breaks in its main lines, the city’s water will remain safe.

Morgan City keeps power in the cold

The city of Morgan City has been spared any electrical issues so far from the winter weather that affected the area in recent days.
“We didn’t have any power problems,” Utilities Director Bill Cefalu said. “Ice built up on a few trees that have branches kind of just hanging a little lower than normal, and we just put some insulators over the wires for right now.”
The trees will be trimmed after the weather subsides.
Morgan City has not had to institute any rolling blackouts, Cefalu said.
If it was forced to shed electricity, Cefalu said, the city can meet the requirements in outages lasting no more than 15 minutes.
If the city lost its tie in with Cleco, it could rely on help from Entergy for assistance. If Cleco was out of service, and Entergy was unable to help the city, it would have access to the 72-megawatt plant with ownership by six Louisiana Energy and Power Authority cities in Morgan City. Morgan City owns 12 of the plants’ megawatts.
“But no matter what and who owns it, if for some reason we got disconnected from the Cleco tie, that plant would still service the city,” Cefalu said. “But that’s all it would service.”
Elsewhere, Cleco reported Thursday morning that just 15 St. Mary Parish customers were without power.
Cleco, as well as South Louisiana Electric Cooperative Association, urged their customers to reduce power usage Wednesday night during peak hours, which conclude at 10 p.m.
“Though we are not anticipating our area to have temperatures as cold as it has been, other parts of Louisiana are experiencing extreme cold weather with icy conditions, which is causing a high demand for electricity in the state,” SLECA said in its Facebook post.
To avoid rolling blackouts, SLECA said its customers should lower their thermostats to 68 degrees, close shades and blinds to minimize heat exiting windows, turn off and unplug all appliances and lights that are not essential and avoid using large appliances, including ovens, washing machines and dishwashers.
Cleco said in a press release that customers should continue conserving energy until further notice.
“Conserving energy now could help keep the lights on later,” Cleco Director of Corporate Communications Jenn-ifer Cahill said in a news release Wedn-esday. “If the power supply cannot meet the demand, periodic power outages could be needed to protect the stability of the power grid and prevent widespread lengthy outages.
“Yesterday, we took the unprecedented step, as directed by MISO, to force outages across parts of our service territory,” Cahill added. “This is only the third time in the company’s 85-year history that this step has been taken — once in 2008 and the other two times during this winter storm event.”
Cleco said in its release that it only would make this move, which would come at the direction of its regional reliability coordinator, MISO, as a “last resort” to keep from having longer power outages that could impact the power grid.
If these occur, then residents could experience numerous outages, each less than an hour, until Cleco receives notification from MISO.
“Unfortunately, we don’t receive much advance notice before being forced to implement rolling power outages. Customers should heed this public appeal as a notice for possible power outages,” said Cahill.

Feast on Irish pub fare this St. Patrick’s Day

St. Patrick’s Day celebrations were different in 2020. Due to the global COVID-19 pandemic, many communities were forced to cancel their annual St. Patrick’s Day festivities. Typically lively, jovial gatherings of good-spirited revelers, St. Patrick’s Day celebrations are beloved by Irish and non-Irish people alike.
Though the COVID-19 vaccines figure to help people across the globe return to a semblance of normalcy at some point in 2021, that long-awaited return to life as the world once knew it is unlikely to occur before mid-March. That means St. Patrick’s Day celebrations in 2021 will likely have to take place at home.
With no parade to attend, would-be Patty’s Day revelers may have to take matters into their own hands this March 17. Cooking up some traditional Irish fare, such as this recipe for “Bacon and Cabbage” from Margaret M. Johnson’s “The Irish Pub Cookbook” (Chronicle Books) is a great way to bring a taste of your favorite Irish pub into your home this St. Patrick’s Day.

BACON AND CABBAGE
3 lbs. Irish boiling bacon
1 small head cabbage, cored and quartered
Parsley Sauce or Whole-Grain Mustard Sauce for serving (see below)
Boiled potatoes for serving
1. Put bacon in a large saucepan and cover with cold water. Bring water slowly to a boil, then cover and reduce heat to medium-low. Simmer, skimming the water occasionally to remove foam, for 1½ hours (about 30 minutes per pound), or until the meat is tender when pierced with a fork.
2. About 20 minutes before the bacon is cooked, add cabbage. Cook for 15 to 20 minutes, or until cabbage is tender, but not soggy. Transfer bacon to a serving dish, and let cool for 10 minutes before slicing. Drain cabbage, reserving ¼ cup of the cooking liquid for the Parsley sauce or 1½ cups for the Whole-Grain Mustard Sauce, and transfer to a serving dish.
3. To serve, slice meat and serve it with cabbage, potatoes and sauce.
Serves 4 to 6

PARSLEY SAUCE
4 Tbsp. unsalted Irish butter
3 Tbsp. all-purpose flour
¼ cup bacon cooking liquid
1¼ cups hot milk
½ cup minced fresh flat-leaf parsley
Salt and freshly ground pepper to taste
In a small saucepan over medium heat, melt butter. Gradually stir in flour. Cook for 1 to 2 minutes, or until blended.
Slowly stir in cooking liquid, then the milk. Bring to a boil and cook, whisking constantly, for 3 to 5 minutes, or until slightly thickened. Add salt, pepper and parsley, and cook, whisking constantly, for 3 to 5 minutes more, or until the sauce is smooth.
Serve warm.

WHOLE-GRAIN MUSTARD SAUCE
2 Tbsp. unsalted Irish butter
1 small onion, chopped
1 clove garlic, minced
2 tsp. whole-grain mustard
2/3 cup dry white wine
1¼ cups bacon cooking liquid, plus more as needed
1¼ cups half-and-half, plus more as needed
Salt and freshly ground pepper to taste
In a saucepan, melt butter over medium heat. Add onion and garlic, and cook for 5 minutes, or until soft.
Stir in mustard and wine, and cook for 2 minutes. Add cooking liquid and half-and-half and cook, whisking constantly, for 5 to 7 minutes, or until reduced by half. Add salt and pepper, and cook for 5 minutes, or until the mixture has a creamy consistency. Add more boiling liquid or half-and-half, if needed, to make a smooth sauce.
Serve warm.

IRISH PUB CHEESE
14 oz. Irish cheddar
4 oz. cream cheese
½ cup light Irish-style beer
1 clove garlic
1½ tsp. ground mustard
1 tsp. paprika
Break cheddar into chunks and place in a food processor.
Pulse to break cheddar up into small pieces.
Add cream cheese, beer, garlic, ground mustard and paprika. Puree until completely smooth.
Scrape the sides of the bowl and puree again if needed.
Serve with pita chips, bread, crackers, veggies or apple slices.

EASY IRISH COTTAGE PIE
1 Tbsp. olive oil
1 lb. lean ground beef
8 oz. mushrooms, sliced
2 cups finely chopped onion
2 carrots, diced small
3 Tbsp. flour
½ cup beef stock
1 tsp. Worcestershire sauce
2 Tbsp. tomato paste
1 tsp. Dijon mustard
Salt and black pepper
1 tsp. fresh thyme leaves (or ½ tsp. dried)
1 sheet puff pastry, thawed
1 egg, lightly whisked
Preheat oven to 400 F and thaw one sheet of puff pastry.
Place olive oil in a 12-inch skillet set over medium-high heat. Once the oil is hot, add onion and carrots; saute just until they begin to soften, 3 to 4 minutes. Add ground beef and mushrooms; cook until browned, about 3 minutes.
Sprinkle meat with the flour and toss to coat, continue cooking for another minute, stirring constantly. Then add tomato paste, stock, Worcestershire, mustard, salt, pepper and thyme; stir to combine.
Bring to a boil, reduce the heat to low, cover, and simmer for 10 to 12 minutes or until the sauce is thickened slightly.
Meanwhile, roll out the thawed puff pastry until it fits the size of your baking dish. Try tracing the baking dish on the sheet of puff pastry so that it fits perfectly cutting it out using a sharp knife or pastry cutter.
When the beef filling is cooked, transfer it to the baking dish. Top with puff pastry, making sure it that it comes to the edges. The pastry will shrink slightly when baked.
Whisk egg slightly and brush over the pastry.
Place the cottage pie on a parchment-lined sheet pan and bake for 25 minutes or until the puff pastry is nicely browned. Let cool slightly before serving.
