Quick pasta dish uses ziti, Italian sausage and fennel

There is something magical about this recipe, which coaxes the ultimate flavor out of just a few humble supermarket ingredients, turning them into a rich-tasting and well-balanced pasta dish that will have your family reaching for seconds.
After browning the sausage, we sautéed a hefty amount of sliced onions, along with sliced fennel, which added texture and flavor to the dish. And while it may seem like a mistake to add an entire can of tomato paste and no other tomato product to make the sauce, the concentrated, bold flavor of the tomato paste intensified during cooking and added rich notes to the dish.
To pull everything together, we added 2 cups of boiling water, simmering the mixture until thick. Sharp Pecorino cheese, added to the sausage-onion mixture, enriched the sauce by giving it a salty bite. Chopped fennel fronds added pleasant anise notes upon serving.
ZITI WITH FENNEL AND ITALIAN SAUSAGE
Start to finish: 30 minutes
1 lb. sweet or hot Italian sausage, casings removed
2 onions, halved and sliced thin
1 fennel bulb, fronds chopped, stalks discarded, bulb halved, cored, and sliced into ½-inch pieces
1 (6-oz.) can tomato paste
1 lb. ziti
Salt and pepper
1 oz. Pecorino Romano cheese, grated (½ cup), plus extra for serving
Bring 4 quarts water to boil in large pot for pasta. Cook sausage in Dutch oven over medium-high heat, breaking up meat with wooden spoon, until no longer pink, about 4 minutes. Stir in onions and fennel, cover, and cook until softened, about 5 minutes. Uncover, reduce heat to medium, and continue to cook until vegetables are golden, 10 to 12 minutes.
Add tomato paste and cook until darkened, about 3 minutes. Stir in 2 cups boiling pasta water and simmer until thickened, about 5 minutes.
Meanwhile, add pasta and 1 tablespoon salt to boiling water and cook, stirring often, until al dente. Reserve 1½ cups cooking water, then drain pasta and return it to pot. Add sausage mixture, Pecorino, and 1 cup reserved cooking water and toss to combine. Season with salt and pepper to taste and add remaining cooking water as needed to adjust consistency. Sprinkle individual portions with fennel fronds and extra Pecorino before serving.

Alfred O’Gwin Jr.

Alfred O’Gwin Jr., 54, a native of Morgan City, died Sunday, March 10, 2019, at his residence.
Visitation will be Saturday from 9 a.m. until services at 1 p.m. at Mt. Era Baptist Church in Morgan City. Burial will follow in Morgan City Cemetery.
He is survived by his mother, Patsy A. O’Gwin of Morgan City; three children, Broderick Junifer, Takeiwa Jones and Tieka Junifer, all of Morgan City; five brothers, Byron O’Gwin of Morgan City, Ronald O’Gwin of Seattle, Reginald O’Gwin of California, Efrem O’Gwin of St. Martinville and Cory Martin of Jacksonville, Florida; three sisters, Melonie O’Gwin and Patrice Hebert, both of Morgan City, and Tina Walton of Baton Rouge; nine grandchildren; and a host of other relatives.
He was preceded in death by his father, and paternal and maternal grandparents.

Patty Elaine Granger

Patty Elaine Granger, 56, a native and resident of Morgan City, died Thursday, March 7, 2019, at Ochsner Medical Center.
Visitation will be Friday from 9 a.m. until services at 11 a.m. at Pilgrim Grove Baptist Church in Morgan City. Burial will follow in Morgan City Cemetery.
She is survived by four children, Marla Morris of Houston, Ronnie Granger of Amarillo, Texas, Alan Granger of Houma and Jarvis Granger of Morgan City; 12 grandchildren; five siblings, Catherine Mingo, Deborah Johnson and Ruby Maize, all of Morgan City, Diana Wells of New Orleans and Gale Thomas of Patterson; and a host of other relatives.
She was preceded in death by her parents, two brothers, and paternal and maternal grandparents.

Rev. Gilbert Raymond Parker Sr.

Rev. Gilbert Raymond Parker Sr., 85, a native of Terrebonne Parish and resident of Houma, died Friday, March 8, 2019.

He is survived by his wife, Mary Hawkins Parker; sons, Gilbert Parker Jr., Brian Parker, Tommy Parker and William Parker, all of Houma, and Phillip Hawkins and Ronald Hawkins, both of Morgan City; daughters, Pauline Allen, Ophelia Henderson, Barbara Williams and Lorie Parker, all of Houma; 34 grandchildren; 78 great-grandchildren; brother, Thomas Parker of Morgan City; and a host of other relatives.
He was preceded in death by two grandchildren, parents, three brothers and six sisters.

Zelda Sons Fromenthal

Zelda Fromenthal, 94, a resident of Berwick, died Sunday, March 10, 2019.
She is survived by a daughter, Dale Hubert of Oregon; four sons, Francis Fromenthal of Berwick, Charles Fromenthal of Baton Rouge, and John Fromenthal and Corey Fromenthal, both of Morgan City; 10 grandchildren; three great-grandchildren; three brothers, Justin Sons of Hessmer, Barry Sons of Breaux Bridge and Jimmy Sons of Missouri; and three sisters, Irma Lombes of Bayou Vista, Diane Sheehan of Berwick and Paulette Wilson of New Iberia.
She was preceded in death by her husband, parents, four brothers and three sisters.
Visitation will be Sunday, 6-9 p.m., at Hargrave Funeral Home in Morgan City, and Monday at St. Stephen Catholic Church from 8 a.m. until services at 11 a.m. Burial will in Berwick Cemetery.

Elizabeth Barta Schultz

November 16, 1951-March 12, 2019
Elizabeth Barta Schultz, 67, a resident of Broussard and former resident of Morgan City, passed away Tuesday, March 12, 2019, at her home.
Elizabeth was born on November 16, 1951, in Morgan City, the daughter of Julius and Mary Elizabeth Barta.
Family was very important to Elizabeth and she cherished every moment that she was able to spend with her loving husband, who she loved unconditionally for 49 years, as well as her children and her adoring grandchildren. In her younger years she was an avid bowler playing in several bowling leagues; she also loved to go fishing and play pokeno with her friends. Most recently she loved traveling to the casino with her husband, as they would spend time together playing the slot machines.
She will be sadly missed and lovingly remembered by her husband of 49 years, George Schultz of Broussard; two children, Louis Schultz and wife Angelique of Broussard, and Mary Dugan and husband Chris of Loreauville; five grandchildren, Lakeyn Schultz, Camryn Schultz, Sophia Dugan, Sadiya Dugan and Austin Dugan; one sister, Cindy Vela and husband Alfred of Flower Bluff, Texas; and one brother, Wesley Barta of Flower Bluff, Texas.
Elizabeth was preceded in death by her parents, Julius and Mary Elizabeth Barta; and one brother, James Barta.
Funeral services will be at 1 p.m. on Friday, March 15, 2019, at Twin City Funeral Home with Pastor Tommy Fromenthal officiating. A visitation will be held from 10 a.m. until the time of the services and following the services, Elizabeth will be laid to rest in the Morgan City Cemetery.

GERALDINE BEAULLIEU ANGERS

A Mass of Christian burial will be held on Friday March 15, 2019, at 10 a.m. in St. John the Evangelist Cathedral for Geraldine Beaullieu Angers, who died on March 12 in Lafayette. She was 98.
Burial will be in Lafayette Memorial Park on West Pinhook Road.
Rev. Chester Arceneaux will conduct the services.
Pallbearers will be Geraldine’s seven sons.
Visitation will be held at Martin & Castille’s downtown location, on St. Landry Street, on Thursday from 5 p.m. till 8 p.m. and will continue on Friday from 8 a.m. until the time of services. A Rosary will be prayed on Thursday at 6:30 p.m.
Survivors include one daughter, Judy Angers, and seven sons, Gerald and wife Bonnie Angers, Trent and wife Cindi Angers, Steve and wife Frances Angers, Tom, Matt, Glenn and wife Janet Angers, and Jeff Angers. Grandchildren are Lisa D. Gould, Shannon D. Owens, Rachel Angers, Kaz Baczinskas, Aline A. Kiffe, Brion Angers, Claire A. Risher, Andrew Weis, as well as Austen, Alex, Mackenzie, Allison, Reagan, Wesley and Graham Angers. She also has 13 great grandchildren and counting.
She was preceded in death by her husband, Robert Angers Jr. (d. 1988); her parents, Gerald and Laurice Beaullieu; her brother, Dr. G. A. Beaullieu; and an infant son (d. 1958).
Geraldine was born and reared in Jeanerette, graduated from St. Joseph’s School, and, in 1940, graduated in education from SLI in Lafayette. She was married on Aug. 30, 1941, just a few months before the U.S. entered World War II. She worked for a while as a school teacher and later as a catechism instructor. She was bookkeeper for the Franklin Banner-Tribune in the 1950s and 1960s, and bookkeeper for Acadiana Profile Magazine in the 1970s. She and her husband co-founded the magazine in 1968. For 25 years, beginning in 1985, she was a volunteer in the Pastoral Care Department at Lafayette General; as such, she was a records-keeper, an assistant to the chaplains, and a bearer of peace to the sick. She was also a peacemaker at home.
Geraldine’s late husband, journalist Robert Angers Jr., wrote in a 1981 column titled “Queen Geraldine”: “In 40 years of marriage, she has been courteous and kind and compassionate and understanding toward everyone, a lady of dignity and queenly virtues….”
The hospital where she worked in pastoral care presented her with the “Heart of Gold” Award in 1999 and stated: “She works well with the chaplains, Pastoral Care volunteers, visitors, patients and family, meeting their needs in a concerned and caring manner…. The department would suffer greatly if it were not for her dedication and loyalty.”
Her son, journalist Trent Angers, wrote in a 2013 article titled, “The Mother of Acadiana Profile”: “She was a homemaker, mother, wife, adviser, comforter. She was always there, the stabilizing force in our home…. By her behavior and demeanor, she taught us prudence, moderation and forbearance while Dad taught us self-reliance, citizenship, salesmanship and ambitiousness.”
The Angers Family thanks the staff of Bethany Healthcare Center, as well as Hospice of Acadiana, whose personnel cared for Geraldine in her final years.
The family suggests that memorial gifts may be made in Geraldine’s name to Hospice of Acadiana and/or the St. Thomas More Angers-Veazey Endowment, which assists some families with tuition.
