Make delicious deviled eggs without the strain or torment

The best deviled eggs start with the best hard-cooked eggs. Conventional wisdom insists that older eggs peel more easily than fresh eggs but we wanted to be able to start with eggs of any age and still end up with flawlessly smooth peeled results.
Instead of a cold-water start, we used our recipe for Easy-Peel Hard-Cooked Eggs, which calls for placing cold eggs directly into hot steam. This denatures the outermost egg white proteins, causing them to shrink away from the shell membrane and making it easy to slip off the eggshells after cooking.
Fresh herbs, cider vinegar, Dijon, Worcestershire sauce, and cayenne elevated the flavor of the filling, and we also created two variations: one with aromatic curry powder and another with crisp bacon and fresh chives. This recipe can be doubled. If you prefer, use a pastry bag fitted with a large plain or star tip to fill the egg halves.
CLASSIC DEVILED EGGS
Start to finish: 35 minutes
6 large eggs
3 Tbsp. mayonnaise
1 Tbsp. minced fresh parsley, plus 12 small whole parsley leaves for garnishing
1 tsp. cider vinegar
1 tsp. Dijon mustard
¼ tsp. Worcestershire sauce
Pinch cayenne pepper
Bring 1 inch water to rolling boil in medium saucepan over high heat. Place eggs in steamer basket. Transfer basket to saucepan (bottom of basket should not be in the water). Cover, reduce heat to medium-low, and cook eggs for 13 minutes.
When eggs are almost finished cooking, combine 2 cups ice cubes and 2 cups cold water in medium bowl. Using tongs or spoon, transfer eggs to ice bath; let sit for 15 minutes. Peel before using.
Halve eggs lengthwise with paring knife. Transfer yolks to bowl; arrange whites on serving platter. Mash yolks with fork until no large lumps remain. Add mayonnaise and use rubber spatula to smear mixture against side of bowl until thick, smooth paste forms, 1 to 2 minutes. Add minced parsley, vinegar, mustard, Worcestershire, and cayenne and mix until fully incorporated.
Transfer yolk mixture to small heavy-duty plastic bag. Press mixture into 1 corner and twist top of bag. Using scissors, snip ½ inch off filled corner. Squeezing bag, pipe yolk mixture into egg white halves. Garnish with parsley leaves before serving.
Makes 12 egg halves

Man proposes, learns she’s already engaged

DEAR ABBY: I met the love of my life eight months ago. Everything about our relationship is perfect. We both love our families, fine food, games and, most importantly, each other. We met at an antique store and now have an extensive stamp collection together. Wanting this joy to last forever, I proposed to her. I couldn’t imagine a happier life for both of us, until I discovered that she is already engaged. Her mother informed me that she had accepted a proposal from a close friend of ours months ago. At first I was devastated, but now I understand ...

Second suspect caught in Lakeside burglaries

A second suspect has been arrested in connection with multiple burglaries in the Lakeside Subdivision area of Morgan City, Police Chief James Blair said in a news release.

Isaiah Escort, 19, of Glenwood Street in Morgan City, was arrested at 10:42 a.m. Wednesday on charges of four counts of simple burglary.

Police continued the investigation into burglaries that occurred June 6 in the Lakeside Subdivision area. Investigators had already arrested Lantrell Ayers, who was identified as one of the suspects involved. In continuation of the investigation, Escort was identified as a second suspect, Blair said.

Investigators found evidence linking Escort to the burglaries that had occurred that night. Information developed led to another search warrant which was executed in the area of Patton Street where property from one of those burglaries was located. A warrant was prepared for Escort’s arrest.

Escort was arrested at the Morgan City Police Department. He was transported to the Morgan City jail where he was booked and incarcerated. The investigation is still ongoing and more charges are expected in the near future as more burglaries are linked. Anyone with information in regard to these investigations is asked to contact the Morgan City Police Department Detectives Division at 985-380-4605.

Blair reported that officers responded to 37 calls and reported the following arrests:

—Carl Singleton, 22, of Garber Street in Morgan City, was arrested at 6 p.m. Wednesday on warrants charging him with possession of cocaine, amphetamine salts, drug paraphernalia, and materials used in the production of crack cocaine, and a warrant charging him with failure to appear to pay a probation fee.

Singleton was located and arrested in the area of Garber Street on warrants for police and city court. The police warrants stem from a June 5 narcotics division investigation during which police executed a search warrant in the area of Garber Street.

Singleton was identified during the investigation. Singleton was in possession of suspected cocaine, amphetamine salts, drug paraphernalia and materials used in the production of crack cocaine, Blair said. The investigation continued when warrants were prepared for Singleton’s arrest. Singleton was jailed.

—Lindsay M. Horowitz, 40, of Wooddale Boulevard in Baton Rouge, was arrested at 1:19 p.m. Wednesday on charges of possession of marijuana, possession of drug paraphernalia and illegal use of a controlled dangerous substance in the presence of juveniles.

Patrol officers responded to a motel in the area of Ninth Street in regard to a narcotics complaint. Officers arrived when Horowitz was identified. Horowitz was in possession of suspected marijuana and drug paraphernalia, Blair said. A child was located in the room with Horowitz. Horowitz was jailed.

—David T. Francois, 46, of Fourth Street in Morgan City, was arrested at 8:34 p.m. Wednesday on a charge of entry or remaining in places after being forbidden.

Narcotics division investigators were patrolling the area of Brownell Homes when they encountered Francois. Francois was previously barred from entering upon housing authority properties, Blair said. Francois was jailed.

St. Mary Parish Sheriff Scott Anslum reported that deputies responded to 38 complaints in the parish and reported the following arrest in east St. Mary Parish:

—Chad Toups, 44, of Doris Street in Amelia, was arrested at 1:17 p.m. Wednesday on a charge of vehicle burglary and a warrant charging him with theft.

A deputy patrolling Amelia responded to a burglary complaint on Julia Street. The deputy learned that several items were stolen from the victims’ vehicle. The deputy found evidence that Toups entered the victims’ vehicle and removed several items. The deputy made contact with Toups and learned of an active warrant for his arrest.

The warrant stemmed from a theft that occurred June 10 on Village Lane in Amelia. Deputies found evidence that Toups removed an item from the victims’ porch, Anslum said. Toups was jailed with no bail set.

Berwick Police Chief James Richard reported the following arrest:

—Javien Francis, 21, of Clausen Drive in Verdunville, was arrested at 10:33 p.m. Wednesday on charges of tail lamps required, no driver’s license, resisting an officer by giving false information, possession of marijuana, obstruction of justice, on a St. Mary Parish warrant charging him with failure to comply with terms and conditions of drug court and a Morgan City police warrant charging him with failure to appear for contempt of court. No bail was set yet.

Patterson Police Chief Janis Merritt reported no arrests.

Governor: La. National Guard team to remain at border

BATON ROUGE (AP) — Gov. John Bel Edwards says Louisiana will keep its National Guard air support team on the Texas border, even as he criticized the Trump administration for separating families who cross into the United States illegally.
Louisiana has a three-person National Guard team and one helicopter on the border.
In a statement Wednesday, Edwards said they will remain there until mid-July as planned. He described it as Louisiana's longstanding practice of providing assistance to neighboring states when requested.
The Democratic governor says Louisiana's National Guard crew "plays no role, direct or indirect, in the ill-conceived policy of separating families."
Edwards described himself as "deeply disturbed" by the Trump administration's decision to separate families apprehended at the border, a policy which has drawn widespread condemnation. The governor called it an "unconscionable practice."

Four-vehicle crash in Berwick

Berwick police responded to a four-vehicle crash at about 11:30 a.m. Wednesday at La. 182 and Gilmore Drive by the post office. Traffic was blocked in both directions on La. 182 for about 30 minutes while authorities cleared the scene of the crash, Police Chief James Richard said. The crash occurred when a 1993 Chevy Silverado pickup truck was traveling west on Gilmore Drive and struck the back of a 2014 Toyota Camry, which then struck a 2017 Nissan Maxima, Richard said. The Toyota Camry and Nissan Maxima both subsequently struck the rear of 2012 Ford F-150 pickup truck. The driver of the Camry, Gail Hebert, 69, of Berwick, and driver of the Maxima, Stephanie Casey, 43, of Bayou Vista, were transported to the hospital with minor injuries. The driver of the Chevy Silverado, Cameron Jackson, 19, of Bayou Vista, was cited for careless operation with a crash, the chief said.
