Cooking, glazing a cured ham? It’s in the bag

Heating and glazing a cured ham seems effortless, but many recipes yield leathery meat in an overly sweet glaze. We wanted to guarantee moist meat in a nuanced glaze.
Bone-in hams, labeled “with natural juices,” have the best flavor and spiral-sliced ones make carving a cinch, but too much time in the oven can ruin even the best ham on the market, so we focused on reducing the cooking time. Soaking the ham in hot water shaved off a full hour, and using an oven bag further reduced the cooking time while also containing the ham’s moisture.
We heated a mixture of sweet and savory pantry staples for two tempting glaze options.
You may bypass the 1 1/2-hour soaking time, but the ham will be less juicy and the heating time must increase to 18 to 20 minutes per pound. We prefer a tapered shank ham but a rounded sirloin ham will work here.
If there is a tear or hole in the ham’s inner covering, wrap it in several layers of plastic wrap before the hot-water soak. If you do not wish to use an oven bag, place the ham cut side down in the roasting pan and cover tightly with aluminum foil, adding 3 to 4 minutes per pound to the heating time.
GLAZED SPIRAL-SLICED HAM
Start to finish: 1 hour, 45 minutes (plus 1 hour, 30 minutes for soaking)
1 (7- to 10-pound) spiral-sliced bone-in half ham
1 large plastic oven bag
1 recipe glaze (recipes follow)
Leaving ham’s inner plastic or foil covering intact, place ham in large container and cover with hot water; set aside for 45 minutes. Drain and cover again with hot water; set aside for another 45 minutes.
Adjust oven rack to lowest position and heat oven to 250 F. Unwrap ham; discard plastic disk covering bone.
Place ham in oven bag. Gather top of bag tightly so bag fits snugly around ham, tie bag and trim excess plastic. Set ham cut side down in large roasting pan and cut 4 slits in top of bag with knife.
Bake ham until center registers 100 degrees, 1 to 1½ hours (about 10 minutes per pound).
Remove ham from oven and increase oven temperature to 350 F. Cut open oven bag and roll back sides to expose ham. Brush ham with one-third of glaze and return to oven until glaze becomes sticky, about 10 minutes (if glaze is too thick to brush, return to heat to loosen).
Remove ham from oven, transfer to carving board, and brush entire ham with another third of glaze. Tent ham with aluminum foil and let rest for 15 minutes. While ham rests, add 4 to 6 tablespoons of ham juices to remaining one-third of glaze and cook over medium heat until thick but fluid sauce forms.
Carve and serve ham, passing sauce separately.
Servings: 12-14

Maple-Orange Glaze:
Makes 1 cup
¾ cup maple syrup
½ cup orange marmalade
2 Tbsp. unsalted butter
1 Tbsp. Dijon mustard
1 tsp. pepper
¼ tsp. ground cinnamon
Combine ingredients in small saucepan and cook over medium heat, stirring occasionally, until reduced to 1 cup, 5 to 10 minutes; set aside.

Cherry-Port Glaze:
Makes 1 cup
½ cup ruby port
½ cup cherry preserves
1 cup packed dark brown sugar
1 tsp. pepper
Simmer port in small saucepan over medium heat until reduced to 2 tablespoons, about 5 minutes. Add remaining ingredients and cook, stirring occasionally, until reduced to 1 cup, 5 to 10 minutes; set aside.

—Nutrition information per serving with port glaze: 463 calories; 151 calories from fat; 17 g fat (5 g saturated; 0 g trans fats); 143 mg cholesterol; 1908 mg sodium; 25 g carbohydrate; 0 g fiber; 23 g sugar; 52 g protein.

Extra place set at the table helps combat holiday blues

Cassidy: Effects of midterm elections a mixed bag

Stronger Republican control over the U.S. Senate should help President Donald Trump’s appointees be more easily approved. But Democrats’ takeover of the House may divert attention away from important issues, U.S. Sen Bill Cassidy, R-Baton Rouge, said Wednesday. Cassidy was the speaker during a Joint Chamber Luncheon at The Cypress Columns in Gray. The luncheon was hosted by the Houma-Terrebonne, Lafourche, St. Mary and Thibodaux chambers of commerce. In the U.S. midterm elections Tuesday, Republicans retained control of the U.S. Senate and gained two seats, while Democrats lost two seats. Suspect charged with 3rd DWI

A 47-year-old man was charged with DWI third offense after Morgan City police saw a vehicle speeding and swerving on La. 182, Police Chief James Blair said in a news release.

—Scott J. Brown, 47, of Mars Road in Bayou Vista, was arrested at 12:24 a.m. Tuesday on charges of reckless operation of a vehicle and DWI third offense.

An officer in the area of La. 182 near Pecos Street observed a vehicle speeding and the vehicle was swerving in and out the lane of travel. A traffic stop was conducted, and the driver, Brown, appeared intoxicated, Blair said.

Brown refused to take a field sobriety test and chemical test for intoxication. A warrant was obtained to have a blood sample retrieved from Brown. Brown was transported to a medical facility for the retrieval and the results of the sample are pending. Brown was transported back to the police department and jailed.

Blair reported the following arrests:

—William J. Allen, 48, of Everett Street in Morgan City, was arrested at 8:53 a.m. Tuesday on a warrant charging him with failure to pay probation fees. Allen was located at his home on Everett Street and arrested him on a city court warrant. Allen was jailed.

—George B. Cain Jr., 58, of Pecan Street in Morgan City, was arrested at 11:23 a.m. Tuesday on charges of possession of crack cocaine and alprazolam.

Officers responded to the area of First and Union streets in regard to an individual involved in illegal drug activity. A description of the individual was given out and he was located on Greenwood Street. The individual was identified as Cain, who admitted to being in the area, Blair said. Cain was in possession of suspected crack cocaine and pills identified as alprazolam. Cain was jailed.

—Dawn R. Height, 49, of Pecan Street in Morgan City, was arrested at 3:27 p.m. Tuesday on warrants charging her with possession of a legend drug, possession of clonazepam and marijuana. Height was located at her home on Pecan Street and arrested on a warrant. Height was jailed.

—Matthew A. Wilson, 24, of Bluefield, West Virginia, was arrested at 12:10 p.m. Monday on charges of theft less than $1,000, criminal damage to property, resisting an officer, misrepresentation during booking and on warrants charging him with bank fraud, access device fraud and probation violation.

Officers responded to a business on La. 182 in regard to a shoplifter. When officers arrived, they observed an individual running toward the rear of the business. Officers pursued the individual, who was seen running into one of the hotels on Allison Street where he was subsequently apprehended.

The items taken were valued at $40.40, and he damaged one of the doors while trying to flee, Blair said. The individual identified himself under an alias and was transported to the police department. During the booking process, the individual was identified as Wilson.

Wilson had an active warrant for the Morgan City Police Department. The warrant stems from a September incident that alleges Wilson used a stolen credit card at several businesses in the area. Wilson also holds an active warrant for probation violation for the Tazewell County Sheriff’s Office in West Virginia. Wilson was additionally charged and jailed.

—Jose A. Melendez, 32, of Sebbys Lane in Bayou Vista, was arrested at 2:59 a.m. Monday on a charge of disturbing the peace.

Officers responded to a home on Hilda Street in regard to a disturbance. Police arrived and were told that Melendez had come to the home, began hitting the door and yelling profanities, Blair said.

Officers located Melendez in the area. He was arrested and jailed.

—Rebecca Price, 47, of Gen. McArthur Street in Morgan City, was arrested at 8:07 a.m. Monday on a warrant charging her with simple cruelty to an animal.

Price was arrested at the police department on a warrant. The warrant stems from a September incident that alleges Price did not provide adequate care for animals in her custody. Price was jailed.

—Hope M. Martin, 41, of Eighth Street in Morgan City, was arrested at 9:34 a.m. Monday on a warrant charging her with failure to appear for issuing worthless checks. Martin was located at her home and arrested on a warrant for the Vernon Parish Sheriff’s Office. Martin was jailed.

—Patrick B. Stewart, 35, of North Bayou Black Road in Gibson, was arrested at 10:42 a.m. Monday on a warrant charging him with failure to appear for trial and on a charge of possession of marijuana.

An officer patrolling the area of La. 182 near David Drive observed a vehicle with improper lighting. A traffic stop was conducted and the driver, Stewart, had a warrant for city court and was also in possession of suspected marijuana, Blair said. Stewart was jailed.

St. Mary Parish Sheriff Scott Anslum reported that deputies responded to 66 complaints in the parish and reported the following arrests in east St. Mary Parish:

—Cedric Gant, 21, of Grace Street in Siracusa, was arrested at 9:33 a.m. Tuesday on a charge of battery of a dating partner.

Deputies patrolling Amelia were dispatched to a location in Amelia in reference to a disturbance. Upon arrival, the deputies made contact with a male who said he witnessed two people in a disturbance in which a man later identified as Gant was hitting a victim repeatedly, Anslum said.

The deputies located Gant and another person in a residence nearby. Gant was transported to the St. Mary Parish Law Enforcement Center for booking. Bail was set at $2,500.

—Ashton Martinez, 19, of Ranger Lane in Bayou Vista, was arrested at 1:02 a.m. Monday on a warrant for failure to appear on a charge of possession of drug paraphernalia.

A deputy patrolling Bayou Vista observed a truck driven with no working license plate light. The deputy conducted a traffic stop and made contact with the driver, Martinez. Through the stop, the deputy learned of an active warrant for Martinez. Martinez was jailed with no bail set.

Berwick Police Chief James Richard reported the following arrests:

—Toby Everage, 19, of Clark Road in Bayou Vista, was arrested at 9:34 p.m. Tuesday on a warrant charging him with unauthorized entry of an inhabited dwelling. No bail was set yet.

—Storm Griffin, 19, of Oregon Street in Berwick, was arrested at 9:56 p.m. Tuesday on a charge of possession of marijuana. Griffin posted $2,000 pre-set bail.

—Matthew Wilson, 24, of Bluefield, West Virginia, was arrested at 5:01 p.m. Monday on warrants charging him with three counts of simple burglary, one count of identity theft and on charges of possession of clonazepam, possession of marijuana and entering contraband into a penal institution.

Franklin Police Chief Tina Thibodeaux reported the following arrest relating to east St. Mary Parish:

—Kurtis Wesley, 34, of Plum Street in Patterson, was arrested at 8:08 p.m. Monday on charges of violation of controlled dangerous substance in drug free zone, possession of marijuana, possession of methamphetamine with intent to distribute, possession of cocaine with intent to distribute and possession of a firearm in the presence of a controlled dangerous substance. Wesley was jailed with no bail set yet.

Patterson Police Chief Janis Merritt reported no arrests.

J. CAMERON WEBSTER

January 30, 1942-November 4, 2018
J. Cameron Webster, 76, a lifelong resident of Morgan City, passed away Sunday, November 4, 2018, at Teche Regional Medical Center.
Cameron was born on January 30, 1942, in Morgan City, the son of Joseph H. Webster and Audrey Thompson Webster.
Cameron served proudly in the United States Army during Vietnam receiving the Silver Star, Bronze Star for Valor, Purple Heart, Bronze Star Oak Leaf Cluster, Air Medal for flying in a combat zone, 2 Overseas Bars, National Defense Service Medal and 3 Vietnam Campaign Ribbons. He was co-founder of Twin Brothers Marine LLC where he was involved in the management of the company. He was a devout Catholic and faithful parishioner of Sacred Heart Catholic Church where he was a Eucharistic Minister, served on the Finance Committee for 25+ years, and he and his wife were counselors for couples who wished to be married in the church. In his free time, Cameron enjoyed fishing and hunting. Cameron was a true family man who loved spending time with his children and grandchildren. He was a graduate of MCHS Class of 1960 and a graduate of Nicholls State University. He was very involved in his community over the years, coaching many area football and basketball teams. He also served as President of the St. Mary Parish Chamber of Commerce, Louisiana Shrimp Association and the National Shrimp Congress.
He will be sadly missed and lovingly remembered by his best friend and devoted wife of 49 years, Linda Sue Chauvin Webster of Morgan City; two sons, Darrell Webster and wife Valerie of Berwick, and Dr. Robert Webster and his wife Dr. Sunshine Webster of Georgetown, Texas; six grandchildren, Miles Webster, Jude Webster, Sophie Webster, Audrey Webster, Luke Webster and Cameron N. Webster; his twin brother, David H. Webster and wife Jane of Morgan City; one sister, Carole W. Arcemont of Brandon, Mississippi; and numerous nieces and nephews.
Cameron was preceded in death by his parents, Joseph H. and Audrey T. Webster; one sister, Catherine “Leasy” W. Sobers; mother-in-law and father-in-law, Audrey and Bert Chauvin; and many close family members and friends.
Pallbearers will be Darrell Webster, Dr. Robert Webster, Miles Webster, Jude Webster, David Webster, Curtis Austin and André Chauvin. Honorary pallbearers will be Luke Webster, Cameron N. Webster, Paul Conner, B.C. Fernandez, Bill Giordano, Curtis Breaux, Warren Landry, Arnold Boudreaux and Luke Manfre. Also serving as honorary pallbearers, the members of the MCHS Class of 1960, employees of Twin Brothers Marine LLC and the Vietnam Brothers of B Company, 18th Infantry, First Infantry Division “Big Red One.”
The family would like to thank Dr. Robert Blereau and his staff, Dr. Robert Gamble and his staff, and Jenny Resignola for the loving care they gave Cameron; as well as thanking the many family members and friends who prayed for Cameron during his illness.
A Mass of Christian Burial will be at 12:00 p.m. on Saturday, November 10, 2018, at Sacred Heart Catholic Church with Father Freddie Decal celebrating Mass. A visitation will be held from 9:00 a.m. until the time of Mass; following Mass Cameron will be laid to rest in the Morgan City Cemetery with Military Honors being rendered by the United States Army Ft. Polk Honor Guard and the East St. Mary Veterans Funeral Squad.
In lieu of flowers, memorial contributions may be given to Sacred Heart Catholic Church Maintenance Fund, 415 Union St., Morgan City, Louisiana 70380.

SANDRA REED

Sandra Reed, 72, a native of Muskegon, Michigan and resident of Berwick, died November 3, 2018.
She is survived by her husband, William Reed; a son, William Reed; four grandchildren; four great-grandchildren; her siblings, Thomas Bennett, Arlene Provencher, William Bennett and Judy Hadix; and a host of other relatives.
She was preceded in death by her mother, a grandchild and a great-grandchild.
Visitation will be Friday from 2 p.m. until services at 4 p.m. at Hargrave Funeral Home.
Hargrave Funeral Home is in charge of arrangements.
